Red Restaurant Kitchen Supervisor

As a Kitchen Supervisor, you’ll be responsible for the daily supervision of food preparation, quality and presentation at our restaurant, while providing exceptional service with high attention to detail. In addition, the Red Kitchen Supervisor will be responsible for training, supervising and working with the staff to create quality food products. This position reports to Red's Chef de Cuisine and the Executive Chef. 

Key Responsibilities include but are not limited to:

  • Assist in Menu creation
  • Create innovative specials and effectively expedite food orders on the line with efficiency
  • Perform the actual cooking of all menu items, normally to order in accordance with the procedures and high level of quality.
  • Prepare food in an efficient manner while adhering to established standardized recipes and procedures

Requirements:

  • 3-5 years of accelerating experience in all food production.
  • Expertise in all kitchen stations
  • Must have knowledge and understanding of the five mother sauces: Hollandaise, Vuloute, Espanola, Tomato, and Bechamel
  • Superior understanding of emulsions: vinaigrette, mayo, aoli, purees, and dressings
  • Superior knowledge of all proteins, herbs, and spices
  • Superior knowledge of high volume fine dining production and a la carte service
  • Supervisory experience required; Including proper teaching and technical skills to assist and motivate all kitchen staff
  • Knowledge of food cost, inventory, and labor controls
  • Must possess a Food Handler Certificate
  • Trained in knife skills and kitchen equipment
